We make almost everything by hand, from our caramels to our Mackinac Island Fudge and nearly everything you see in our Ocean Springs chocolate store. We use techniques and recipes from the 1940s, like our old-fashioned copper kettles used to make caramel and the cool marble countertops we use to make our Mackinac Island Fudge.

Kilwins was founded in 1947 by Don and Katy Kilwin, whose love for chocolate and candy-making inspired them to open their first store. Business grew over the years, and more items were added to the Kilwins menu, like our Original Recipe Ice Cream. What started as a small chocolate shop eventually blossomed into the Kilwins we know today. Our menu has evolved, but we’re still committed to the candy-making techniques and values that make Kilwins a household name.

The Kilwins Chocolate-Making Process
To make our incredible menu, our ingredients must be equally incredible. The Kilwins magic starts with finding the right cocoa beans. For instance, our dark chocolate is made from cocoa beans sourced from the Dominican Republic and Peru. These beans are roasted and ground, which helps give our chocolate its legendary taste and texture.
Our beans go through a process called conching, which helps bring out their natural textures. We add other ingredients like cocoa butter, sugar, milk, and vanilla to give it even more sweetness. The final product is our very own Heritage Chocolate that is Fair Trade Certified™, kosher-certified, and loved by our customers.

We’re also known for our well-renowned Original Recipe Ice Cream. Since 1985, we have developed amazing flavors to cool you off on a warm day. Our ice cream is unlike any other you’ve ever had; we make it using first-class ingredients. Then, we add in bits of fudge, rich chocolate pieces, or more, depending on the flavor. To maintain our ice cream’s freshness and temperature, we send our batches to you in our exclusively owned climate-controlled trucks. Once it reaches our Ocean Springs ice cream store, our ice cream has the perfect temperature, consistency, and taste, ready for a waffle cone (or waffle bowl).
